- 4 large russet potatoes, cut into fries
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup freshly grated parmesan cheese
- 2 tablespoons chopped fresh parsley
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 2 tablespoons cornstarch
Instructions
- Preheat oven to 425°F and line a large baking sheet with parchment paper.
- Wash and cut the russet potatoes into evenly sized fries. Soak them in cold water for 30 minutes, then drain and dry completely.
- In a large bowl, toss the fries with olive oil, cornstarch, paprika, salt, and black pepper until evenly coated.
- Arrange the fries in a single layer on the prepared baking sheet, leaving space between them.
- Bake for 35 minutes, flipping halfway through cooking until golden and crispy.
- During the last 5 minutes of baking, sprinkle the minced garlic over the fries.
- Remove the fries from the oven and immediately toss with freshly grated parmesan cheese and chopped parsley.
- Serve hot with your favorite dipping sauce.
