This Vegetarian Matzo Lasagna is a cozy, cheesy baked dish layered with softened matzo sheets, creamy ricotta, savory mushrooms, spinach, marinara sauce, and bubbling mozzarella. It is comforting, hearty, and perfect for Passover or an easy family dinner.

- 6 matzo sheets, softened briefly in warm water
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 5 cups fresh spinach
- 15 ounces ricotta cheese
- 2 cups mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 2 large eggs
- 4 cups marinara sauce
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 375°F and lightly grease a 9×13 baking dish.
- Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 4 minutes until softened.
- Add minced garlic and sliced mushrooms. Cook until the mushrooms release moisture and become lightly browned.
- Stir in fresh spinach and cook until wilted. Remove from heat.
- In a mixing bowl, combine ricotta cheese, eggs, dried oregano, salt, black pepper, and half of the parmesan cheese.
- Spread a thin layer of marinara sauce across the bottom of the baking dish.
- Briefly dip matzo sheets in warm water to soften.
- Layer softened matzo sheets over the sauce, then spread ricotta mixture, vegetable mixture, marinara sauce, and mozzarella cheese.
- Repeat the layers until all ingredients are used, finishing with marinara sauce, remaining mozzarella cheese, and remaining parmesan cheese on top.
- Cover loosely with foil and bake for 30 minutes.
- Remove foil and continue baking for 15 minutes until the top is golden and bubbly.
- Let the lasagna rest for 10 minutes before slicing.
- Sprinkle chopped fresh parsley on top before serving warm.
Notes
- Do not oversoak the matzo sheets or they may become too soft.
- Freshly shredded mozzarella melts more smoothly than pre-shredded cheese.
- Allow the lasagna to rest before slicing for cleaner layers.
- Leftovers taste even better the next day after the flavors develop further.
