Description

Crispy potato shells filled with creamy mashed potatoes, melted cheese, eggs, and savory turkey ham, perfect for a hearty and comforting breakfast.


Ingredients

  • 4 large russet potatoes
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1 cup diced turkey ham
  • 2 tablespoons chopped green onions
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 200°C and line a baking sheet.
  2. Bake whole potatoes until tender, then let them cool slightly.
  3. Slice potatoes in half and scoop out the centers, keeping skins intact.
  4. In a bowl, mash the potato flesh with butter, milk, salt, and pepper until creamy.
  5. Fold in shredded cheddar cheese, diced turkey ham, and chopped green onions.
  6. Fill each potato skin with the mixture and create a small well in the center.
  7. Place stuffed potatoes back in the oven and bake until heated through.
  8. Crack one egg into each potato and bake again until eggs are set to your liking.
  9. Remove from oven, sprinkle extra cheese and green onions if desired, and serve warm.

Notes

  • Use freshly grated cheese for better melting texture.
  • Do not overbake the eggs if you prefer a soft yolk.
  • You can prepare the filling ahead and assemble later.
  • Reheat in the oven to maintain crispiness.
