Description

Ingredients

  • 1 cup (120g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 large eggs, room temperature
  • 1 cup (200g) granulated sugar
  • 1/4 cup (60ml) whole milk, warm
  • 1/4 cup (60ml) vegetable oil
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line the bottom of an 8-inch round cake pan with parchment paper. Do not grease the sides.
  2. In a bowl, sift together flour, baking powder, and salt. Set aside.
  3. In a large bowl, beat the eggs with an electric mixer on high speed for 7–8 minutes, until thick, pale, and tripled in volume.
  4. Gradually add sugar while beating, continuing to mix until light and fluffy.
  5. In a separate bowl, whisk together warm milk, oil, and vanilla extract.
  6. Gently fold the flour mixture into the whipped eggs in three additions, using a spatula and being careful not to deflate the batter.
  7. Slowly drizzle in the milk-oil mixture while folding, until fully combined.
  8. Pour batter into the prepared pan and smooth the top.
  9. Bake for 30–35 minutes or until the top springs back when touched and a toothpick comes out clean.
  10. Let cool in the pan for 10 minutes, then run a knife around the edge and turn out onto a wire rack to cool completely.

Notes

  • Room temperature eggs whip better — don’t skip this step.
  • For a richer flavor, substitute some of the milk with heavy cream.
  • This sponge is perfect for layered cakes or trifles.
  • Use cake flour for an even lighter texture, if desired.
