- 2 cups cooked chicken or beef, shredded
- 1 cup shredded cheddar cheese

- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons vegetable oil (for frying)

Instructions
- Heat the tortillas in a dry skillet or microwave until soft and pliable, about 10-15 seconds per tortilla.
- In a bowl, mix the shredded chicken or beef with cheese, onion, cumin, garlic powder, chili powder, salt, and black pepper.
- Place 2 tablespoons of the filling in the center of each tortilla and roll tightly to form a taquito.
- Heat vegetable oil in a large skillet over medium-high heat. Fry the taquitos in batches, turning occasionally, until golden and crispy, about 3-4 minutes per side.
- Transfer the taquitos to a paper towel-lined plate to drain excess oil.
- Serve hot with sour cream, guacamole, or salsa for dipping.
Notes
- For a lighter version, you can bake the taquitos at 425°F (220°C) for 15–20 minutes, spraying with cooking spray for a crispy texture.
- Fillings can be varied with beans, cheese, or even vegetables for a vegetarian version.
- These taquitos freeze well before frying, so you can make a batch in advance and cook them later.
