Ingredients
Scale
- 8 oz short pasta (like bowtie or fusilli)
- 2 ripe peaches, sliced
- 1 cup pitted cherries, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup fresh basil leaves, torn
- 2 tablespoons chopped fresh mint (optional)
- 3 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey or maple syrup
- Salt and black pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse under cold water to cool.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper to make the dressing.
- In a large mixing bowl, combine cooked pasta, sliced peaches, cherries, feta, basil, and mint if using.
- Drizzle the dressing over the salad and toss gently to combine.
- Chill for 15–30 minutes before serving to allow flavors to meld. Garnish with extra feta or herbs if desired.
Notes
- Use nectarines instead of peaches for a firmer texture.
- Goat cheese can be substituted for feta for a creamier version.
- Add arugula or baby spinach for extra greens and freshness.
