- 6 bone-in, skin-on chicken thighs
- 2 tablespoons olive oil
- 1 tablespoon ground sumac
- 1 teaspoon paprika
- 1/2 teaspoon ground cumin
- 2 garlic cloves, minced
- Juice of 1 lemon
- Salt and black pepper to taste
- 1 cup plain Greek yogurt
- 1/2 cucumber, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1 green onion, thinly sliced
- 1 tablespoon olive oil (for salad)
- Salt and lemon juice to taste (for salad)
Instructions
- In a large bowl, mix olive oil, sumac, paprika, cumin, garlic, lemon juice, salt, and pepper. Add chicken thighs and coat well. Marinate for at least 30 minutes or overnight.
- Preheat oven to 200°C (400°F).
- Place chicken thighs on a baking tray lined with parchment paper. Roast for 35–40 minutes or until golden and cooked through.
- Meanwhile, prepare the yogurt herb salad: In a bowl, mix Greek yogurt with cucumber, parsley, mint, green onion, olive oil, lemon juice, and salt.
- Serve the roasted chicken thighs hot with a generous spoonful of the yogurt and herb salad on the side.
Notes
- Serve with flatbread or over rice for a more filling meal.
- Sumac can be found in Middle Eastern grocery stores or substituted with lemon zest in a pinch.
- Make the yogurt salad ahead for more developed flavors.
