Scale
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup semi-sweet chocolate chips
- 2 cups mini marshmallows
- 3/4 cup strawberry preserves, warmed slightly
- 1/2 cup fresh strawberries, diced small
Instructions
- Preheat the oven to 350°F and line an 8-inch square baking pan with parchment paper.
- Whisk the melted butter and sugar in a mixing bowl until smooth.
- Add the eggs and vanilla extract, then whisk until fully combined.
- Stir in the cocoa powder, all-purpose flour, and salt until just combined.
- Fold in the semi-sweet chocolate chips.
- Spread the brownie batter evenly into the prepared baking pan.
- Bake for 22 minutes, until the brownie base is mostly set.
- Remove the pan from the oven and sprinkle the mini marshmallows evenly over the top.
- Return the pan to the oven and bake for 4 minutes, just until the marshmallows soften.
- Warm the strawberry preserves slightly, then gently spread them over the softened marshmallows.
- Scatter the diced strawberries over the top.
- Cool completely, then chill for 30 minutes for cleaner slices.
- Lift from the pan, slice into 12 bars, and serve.
Notes
- Let the bars cool fully before slicing so the marshmallow layer sets properly.
- Clean the knife between cuts for neater squares.
- Use raspberry or cherry preserves for a simple flavor variation.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
