Description

Stir-Fried Ginger Tomato Beef is a flavorful and quick Asian-inspired dish featuring tender slices of beef sautéed with fresh ginger and juicy tomatoes in a savory sauce. Perfect for weeknight dinners served over rice or noodles.


Ingredients

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 tablespoon fresh ginger, julienned
  • 23 medium tomatoes, cut into wedges
  • 2 cloves garlic, minced
  • 1 tablespoon light soy sauce (for stir-fry)
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 2 green onions, chopped
  • Optional: chili flakes or fresh chili for heat

Instructions

  1. In a bowl, combine sliced beef with 1 tablespoon soy sauce, oyster sauce, and cornstarch. Mix well and marinate for 10–15 minutes.
  2. Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the beef and stir-fry for 2–3 minutes until browned. Remove and set aside.
  3. Add the remaining oil to the wok. Sauté ginger and garlic until fragrant (about 30 seconds).
  4. Add tomato wedges and cook for 1–2 minutes until slightly softened.
  5. Return beef to the wok. Add light soy sauce, sugar, and pepper. Stir-fry everything together for another 2–3 minutes until well combined and heated through.
  6. Toss in chopped green onions and optional chili if using. Serve hot with steamed rice or noodles.

Notes

  • For extra tenderness, slice beef against the grain and marinate longer.
  • Add a splash of water or broth if you prefer more sauce.
  • Great with jasmine rice or egg noodles as a base.
