Stir-Fried Ginger Tomato Beef is a flavorful and quick Asian-inspired dish featuring tender slices of beef sautéed with fresh ginger and juicy tomatoes in a savory sauce. Perfect for weeknight dinners served over rice or noodles.

- 1 lb (450g) beef sirloin or flank steak, thinly sliced
- 1 tablespoon soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- 1 tablespoon fresh ginger, julienned
- 2–3 medium tomatoes, cut into wedges
- 2 cloves garlic, minced
- 1 tablespoon light soy sauce (for stir-fry)
- 1 teaspoon sugar
- 1/4 teaspoon black pepper
- 2 green onions, chopped
- Optional: chili flakes or fresh chili for heat
Instructions
- In a bowl, combine sliced beef with 1 tablespoon soy sauce, oyster sauce, and cornstarch. Mix well and marinate for 10–15 minutes.
- Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the beef and stir-fry for 2–3 minutes until browned. Remove and set aside.
- Add the remaining oil to the wok. Sauté ginger and garlic until fragrant (about 30 seconds).
- Add tomato wedges and cook for 1–2 minutes until slightly softened.
- Return beef to the wok. Add light soy sauce, sugar, and pepper. Stir-fry everything together for another 2–3 minutes until well combined and heated through.
- Toss in chopped green onions and optional chili if using. Serve hot with steamed rice or noodles.
Notes
- For extra tenderness, slice beef against the grain and marinate longer.
- Add a splash of water or broth if you prefer more sauce.
- Great with jasmine rice or egg noodles as a base.
