- 12 ounces linguine
- 1 pound large shrimp, peeled and deveined
- 1 pound boneless skinless chicken thighs, cut into bite-size pieces
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 6 cloves garlic, minced
- 1/2 cup low-sodium chicken broth
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon crushed red pepper flakes
- 1 teaspoon salt, divided
- 1/2 teaspoon black pepper
- 1/4 cup fresh parsley, chopped
- 1/3 cup grated Parmesan cheese, optional
- 1/2 cup reserved pasta water, used as needed
Instructions
- Bring a large pot of salted water to a boil and heat a large skillet over medium-high heat.
- Pat the shrimp dry and season with 1/4 teaspoon salt and a pinch of black pepper.
- Season the chicken pieces with 1/2 teaspoon salt and the remaining black pepper.
- Add olive oil to the skillet and cook the chicken for 5 to 6 minutes, stirring occasionally, until golden and cooked through. Transfer to a plate.
- Add the shrimp to the same skillet and cook for 1 to 2 minutes per side, just until pink. Transfer to the plate with the chicken.
- Cook the linguine until al dente, then reserve 1/2 cup pasta water before draining.
- Lower the skillet heat to medium and add butter, garlic, and crushed red pepper flakes. Cook for about 1 minute until fragrant.
- Stir in chicken broth, lemon juice, and lemon zest, scraping up the flavorful bits from the skillet.
- Return the chicken, shrimp, and drained linguine to the skillet.
- Toss everything together, adding reserved pasta water a little at a time until the sauce turns glossy and coats the pasta.
- Stir in parsley and Parmesan if using, then serve warm.
Notes
- Do not overcook the shrimp, since they turn rubbery quickly.
- Save pasta water before draining because it helps the sauce cling to the noodles.
- Use fresh lemon juice for the brightest flavor.
- Add more crushed red pepper flakes at the table for extra heat.
