Description

  • 2 medium sweet potatoes, peeled and diced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 large red bell pepper, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped

Instructions

  1. Heat a large skillet over medium heat.
  2. Add olive oil, then sauté onion and garlic until fragrant.
  3. Add ground beef and cook until browned, breaking it apart as it cooks.
  4. Stir in sweet potatoes, bell pepper, corn, black beans, and all spices.
  5. Cover and cook for about 20 minutes, stirring occasionally, until sweet potatoes are tender.
  6. Taste and adjust seasoning, then sprinkle fresh cilantro on top.
  7. Serve hot straight from the skillet.
