- 1 cup mayonnaise (Duke’s Mayo recommended)
- 2 celery hearts, finely chopped
- 1/2 cup red onion, finely chopped
- 1/4 cup sweet relish
- 2 hard-boiled eggs, chopped
- 1 1/2 tsp Cajun seasoning (or substitute with seasoned salt)
- 1/2 tsp garlic powder
- Freshly ground black pepper, to taste

Instructions
- In a large bowl, combine the chicken, mayonnaise, celery, red onion, relish, and chopped eggs.
- Season with Cajun seasoning, garlic powder, and black pepper. Mix well until everything is evenly coated.
- Cover and refrigerate for at least 1 hour to let the flavors meld together.
- Serve chilled on butter croissants, with lettuce and tomato, or with crackers and veggies for a lighter option.
