- 2 cups elbow macaroni
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 cups whole milk
- 1 cup heavy cream
- 4 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 large eggs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
Instructions
- Preheat oven to 180°C and lightly grease a baking dish.
- In a bowl, whisk together whole milk, heavy cream, eggs, salt, black pepper, and paprika until smooth.
- Cook elbow macaroni in salted water until just tender, then drain.
- Mix the cooked macaroni with butter and half of the cheddar and mozzarella cheeses.
- Transfer the mixture into the prepared baking dish and pour the liquid mixture evenly over it.
- Top with the remaining cheese.
- Bake for 35 minutes until golden on top and set in the center.
- Let it rest for 10 minutes before serving.
Notes
- Use freshly shredded cheese for best melting results
- Do not overcook the pasta before baking
