- 1 ½ cups long grain white rice
- 3 cups chicken broth

- ¼ cup lemon juice

- 1 teaspoon dried thyme
- 2 tablespoons olive oil
- 1 ½ teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- If your slow cooker has a sauté function, preheat it. Otherwise, heat a skillet and sear chicken thighs for added flavor.
- In the slow cooker, combine rice, chicken broth, garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper.
- Lightly grease the slow cooker insert with olive oil.
- Place chicken thighs on top of the rice mixture and drizzle with olive oil.
- Cover and cook on low for 4 to 5 hours or on high for 2.5 to 3 hours, until chicken is tender and rice is cooked through.
- Stir in fresh parsley and an extra splash of lemon juice just before serving.
- Serve warm, garnished with lemon slices or more parsley if desired.
