Description

Slow Cooker Lemon Herb Chicken and Rice is a cozy, comforting dish featuring tender chicken thighs, fluffy lemon-infused rice, and a medley of herbs for a bright and satisfying one-pot meal.


Ingredients

  • 6 bone-in, skinless chicken thighs
  • 1 ½ cups long grain white rice
  • 3 cups chicken broth
  • 4 cloves garlic, minced
  • ¼ cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil
  • 1 ½ teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. If your slow cooker has a sauté function, preheat it. Otherwise, heat a skillet and sear chicken thighs for added flavor.
  2. In the slow cooker, combine rice, chicken broth, garlic, lemon juice, lemon zest, oregano, thyme, salt, and pepper.
  3. Lightly grease the slow cooker insert with olive oil.
  4. Place chicken thighs on top of the rice mixture and drizzle with olive oil.
  5. Cover and cook on low for 4 to 5 hours or on high for 2.5 to 3 hours, until chicken is tender and rice is cooked through.
  6. Stir in fresh parsley and an extra splash of lemon juice just before serving.
  7. Serve warm, garnished with lemon slices or more parsley if desired.

Notes

  • Use long grain rice like jasmine to avoid mushiness.
  • Do not lift the lid frequently as it affects cooking temperature.
  • Feel free to add peas or spinach in the last 30 minutes for extra color and nutrients.
