- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Zest and juice of 1 lemon
- Salt and pepper to taste
- 1 tablespoon chopped parsley (optional, for garnish)
Instructions
- Cook the tortellini according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium-high heat. Add shrimp, season with salt and pepper, and cook for 2–3 minutes per side or until pink and opaque. Remove shrimp and set aside.
- In the same skillet, melt butter and add garlic. Sauté for 1 minute until fragrant.
- Stir in the heavy cream, lemon zest, and lemon juice. Simmer for 2–3 minutes to slightly thicken.
- Add Parmesan cheese and stir until melted and sauce is smooth.
- Return shrimp to the skillet and add the cooked tortellini. Gently toss everything to coat in the sauce.
- Simmer for another 1–2 minutes until heated through. Taste and adjust seasoning if needed.
- Garnish with parsley and serve immediately.
