Description

Light, crispy, and golden shrimp fritto misto made with tender shrimp and mixed seafood pieces in a delicate sparkling water batter, finished with fresh lemon wedges and parsley for a bright Italian-inspired seafood dish.


Ingredients

  • 1 pound raw shrimp, peeled and deveined
  • 8 ounces mixed seafood pieces or calamari rings
  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking powder
  • 1 cup ice cold sparkling water
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil for frying
  • 1 lemon cut into wedges
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a heavy pot to 350°F and place a wire rack nearby for draining.
  2. In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper.
  3. Slowly pour in the ice cold sparkling water and whisk until smooth.
  4. Pat the shrimp and seafood pieces completely dry with paper towels.
  5. Dip the seafood lightly into the batter, allowing excess batter to drip off.
  6. Fry the seafood in small batches for 2 to 4 minutes until golden brown and crispy.
  7. Transfer the fried seafood to the wire rack.
  8. Sprinkle with chopped parsley and serve immediately with fresh lemon wedges.
