- 1 pound raw shrimp, peeled and deveined
- 8 ounces mixed seafood pieces or calamari rings
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon baking powder
- 1 cup ice cold sparkling water
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil for frying
- 1 lemon cut into wedges
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil in a heavy pot to 350°F and place a wire rack nearby for draining.
- In a mixing bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper.
- Slowly pour in the ice cold sparkling water and whisk until smooth.
- Pat the shrimp and seafood pieces completely dry with paper towels.
- Dip the seafood lightly into the batter, allowing excess batter to drip off.
- Fry the seafood in small batches for 2 to 4 minutes until golden brown and crispy.
- Transfer the fried seafood to the wire rack.
- Sprinkle with chopped parsley and serve immediately with fresh lemon wedges.
