- 2 large ripe plantains, peeled and mashed
- 2 cups all-purpose flour
- 1/4 cup sugar
- 2 teaspoons active dry yeast
- 3/4 cup warm water
- 1/2 teaspoon salt
- 1/2 teaspoon ground nutmeg
- Vegetable oil for deep frying
Instructions
- Heat vegetable oil in a deep pot over medium heat to around 350°F (175°C).
- Mash ripe plantains until smooth. In another bowl, mix warm water, yeast, and sugar, and let it sit for 5–10 minutes until foamy.
- Combine mashed plantains, yeast mixture, flour, salt, and nutmeg into a smooth batter.
- Ensure your oil is at the right temperature for frying.
- Scoop small portions of batter and drop gently into the oil.
- Fry in batches for 4–6 minutes until golden brown, turning occasionally.
- Remove with a slotted spoon and drain on a wire rack. Serve warm, with powdered sugar if desired.
Notes
- Use very ripe plantains for maximum sweetness.
- Do not overcrowd the pot to maintain oil temperature.
- Batter can be prepped ahead and refrigerated until frying.
