Description

Golden, fluffy, and kissed with the natural sweetness of ripe plantains, Plantain Puff Puff is a West African-inspired treat with a tropical twist. Crisp outside, pillowy inside, and full of warm, spiced flavor, it’s the perfect snack or dessert.


Ingredients

  • 2 large ripe plantains, peeled and mashed
  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 2 teaspoons active dry yeast
  • 3/4 cup warm water
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • Vegetable oil for deep frying

Instructions

  1. Heat vegetable oil in a deep pot over medium heat to around 350°F (175°C).
  2. Mash ripe plantains until smooth. In another bowl, mix warm water, yeast, and sugar, and let it sit for 5–10 minutes until foamy.
  3. Combine mashed plantains, yeast mixture, flour, salt, and nutmeg into a smooth batter.
  4. Ensure your oil is at the right temperature for frying.
  5. Scoop small portions of batter and drop gently into the oil.
  6. Fry in batches for 4–6 minutes until golden brown, turning occasionally.
  7. Remove with a slotted spoon and drain on a wire rack. Serve warm, with powdered sugar if desired.

Notes

  • Use very ripe plantains for maximum sweetness.
  • Do not overcrowd the pot to maintain oil temperature.
  • Batter can be prepped ahead and refrigerated until frying.
