Instructions
- Line a tray or baking sheet with parchment paper.
- In a mixing bowl, combine creamy peanut butter, powdered sugar, softened butter, and vanilla extract until a thick dough forms.
- Roll the mixture into bite-sized balls and place them on the prepared tray.
- Refrigerate the balls for 20 minutes until firm.
- In a microwave safe bowl, melt the semi sweet chocolate chips with coconut oil in short intervals, stirring until smooth.
- Dip each chilled peanut butter ball into the melted chocolate until fully coated.
- Place the coated bites back onto the tray and sprinkle with crushed peanuts if desired.
- Refrigerate until the chocolate is fully set, then serve and enjoy.
