Description

A creamy and flavorful copycat Olive Garden Chicken Scampi Pasta with tender chicken, colorful bell peppers, and a garlicky white wine cream sauce tossed with angel hair pasta and topped with Parmesan cheese.

  • 4 tablespoons unsalted butter, divided
  • 1/2 red bell pepper, sliced thinly
  • 1/2 yellow bell pepper, sliced thinly
  • 1/2 green bell pepper, sliced thinly
  • 1/2 red onion, thinly sliced
  • 2 tablespoons garlic, minced
  • 4 tablespoons flour, divided
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1 cup white wine
  • 1 cup chicken broth
  • 1 pound angel hair pasta
  • 1 pound chicken breast tenderloins
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream, warm
  • 1/2 medium lemon, juiced
  • 1 cup Parmesan cheese, shaved, divided

Instructions

  1. Cook the angel hair pasta according to package directions until al dente. Drain and set aside.
  2. Season chicken tenderloins with salt and black pepper, then dredge in 2 tablespoons of flour.
  3. Heat 2 tablespoons butter and 2 tablespoons olive oil in a large skillet over medium-high heat. Sear chicken until golden brown and cooked through, about 4-5 minutes per side. Remove and set aside.
  4. In the same skillet, add remaining 2 tablespoons butter. Sauté bell peppers, onion, and garlic until softened, about 3-4 minutes.
  5. Sprinkle remaining 2 tablespoons flour over vegetables and stir to coat.
  6. Add red pepper flakes, oregano, and basil. Stir in white wine and chicken broth, scraping up browned bits from the pan. Simmer until slightly thickened.
  7. Lower heat and whisk in warm heavy cream, lemon juice, and half of the Parmesan cheese. Simmer for 2-3 minutes until sauce is creamy.
  8. Add cooked pasta and toss to coat in the sauce.
  9. Top with chicken tenderloins and remaining Parmesan cheese before serving.
