- 4 tablespoons unsalted butter, divided
- 1/2 red bell pepper, sliced thinly
- 1/2 yellow bell pepper, sliced thinly
- 1/2 green bell pepper, sliced thinly
- 1/2 red onion, thinly sliced
- 2 tablespoons garlic, minced
- 4 tablespoons flour, divided
- 1/2 teaspoon red pepper flakes
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1 cup white wine
- 1 cup chicken broth
- 1 pound angel hair pasta
- 1 pound chicken breast tenderloins
- 1 teaspoon kosher salt
- 1/2 teaspoon coarse ground black pepper
- 2 tablespoons olive oil
- 1/2 cup heavy cream, warm
- 1/2 medium lemon, juiced
- 1 cup Parmesan cheese, shaved, divided
Instructions
- Cook the angel hair pasta according to package directions until al dente. Drain and set aside.
- Season chicken tenderloins with salt and black pepper, then dredge in 2 tablespoons of flour.
- Heat 2 tablespoons butter and 2 tablespoons olive oil in a large skillet over medium-high heat. Sear chicken until golden brown and cooked through, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, add remaining 2 tablespoons butter. Sauté bell peppers, onion, and garlic until softened, about 3-4 minutes.
- Sprinkle remaining 2 tablespoons flour over vegetables and stir to coat.
- Add red pepper flakes, oregano, and basil. Stir in white wine and chicken broth, scraping up browned bits from the pan. Simmer until slightly thickened.
- Lower heat and whisk in warm heavy cream, lemon juice, and half of the Parmesan cheese. Simmer for 2-3 minutes until sauce is creamy.
- Add cooked pasta and toss to coat in the sauce.
- Top with chicken tenderloins and remaining Parmesan cheese before serving.
