Description
Mini Taco Stuffed Potatoes are a fun and flavorful appetizer or snack featuring bite-sized potatoes loaded with seasoned taco meat, melty cheese, and your favorite toppings. Perfect for parties, game days, or weeknight bites.

- 1.5 lbs baby potatoes (Yukon gold or red)
- 1/2 lb ground beef or ground turkey
- 1 tbsp taco seasoning
- 1/4 cup water
- 1/2 cup shredded cheddar cheese
- 2 tbsp olive oil
- Salt and pepper, to taste
- Sour cream, chopped green onions, diced tomatoes, jalapeños (optional, for topping)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss baby potatoes with olive oil, salt, and pepper. Roast for 25–30 minutes, or until tender.
- Meanwhile, cook ground beef in a skillet over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the meat. Simmer for 3–4 minutes until thickened.
- Once potatoes are cool enough to handle, slice off the top of each and scoop out a small amount from the center using a melon baller or spoon.
- Fill each potato with taco meat and top with shredded cheese.
- Return to the oven for 5–7 minutes, or until cheese is melted.
- Top with sour cream, green onions, tomatoes, or jalapeños if desired. Serve warm.
Notes
- You can make these ahead and reheat before serving.
- Use black beans instead of meat for a vegetarian version.
- Mini potatoes can be boiled instead of roasted for a faster prep.
