- 1 1/2 pounds chicken tenderloins, sliced into bite sized pieces
- 1 cup orzo pasta
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 cup sun dried tomatoes, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 1 cup freshly grated parmesan cheese
- 2 cups baby spinach
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Heat a large deep skillet over medium heat.
- Season the chicken pieces with salt, pepper, and Italian seasoning.
- Add olive oil to the skillet and sear the chicken until golden brown and cooked through, about 5 to 6 minutes. Remove and set aside.
- Add garlic and sun dried tomatoes to the skillet and cook for 1 minute.
- Stir in the orzo and pour in the chicken broth.
- Simmer for about 10 minutes, stirring often, until the orzo is tender.
- Pour in the heavy cream, parmesan cheese, spinach, and cooked chicken.
- Cook until creamy and heated through.
- Top with red pepper flakes and extra parmesan before serving.
Notes
- Use freshly grated parmesan for the smoothest sauce.
- Add extra broth if the orzo absorbs too much liquid.
- Store leftovers in the refrigerator for up to 4 days.
- Add a splash of broth when reheating to keep the sauce creamy.
