Description

Creamy chicken orzo made in one skillet with parmesan, spinach, garlic, and sun dried tomatoes for a cozy and comforting dinner.


Ingredients

  • 1 1/2 pounds chicken tenderloins, sliced into bite sized pieces
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun dried tomatoes, chopped
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup freshly grated parmesan cheese
  • 2 cups baby spinach
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Heat a large deep skillet over medium heat.
  2. Season the chicken pieces with salt, pepper, and Italian seasoning.
  3. Add olive oil to the skillet and sear the chicken until golden brown and cooked through, about 5 to 6 minutes. Remove and set aside.
  4. Add garlic and sun dried tomatoes to the skillet and cook for 1 minute.
  5. Stir in the orzo and pour in the chicken broth.
  6. Simmer for about 10 minutes, stirring often, until the orzo is tender.
  7. Pour in the heavy cream, parmesan cheese, spinach, and cooked chicken.
  8. Cook until creamy and heated through.
  9. Top with red pepper flakes and extra parmesan before serving.

Notes

  • Use freshly grated parmesan for the smoothest sauce.
  • Add extra broth if the orzo absorbs too much liquid.
  • Store leftovers in the refrigerator for up to 4 days.
  • Add a splash of broth when reheating to keep the sauce creamy.
