Description

These Lazy Sushi Squares bring together seasoned sushi rice, a creamy crab topping, fresh cucumber, avocado, green onions, sesame seeds, and nori for an easy sushi-inspired bake that is sliced into neat squares.


Ingredients

  • 1 1/2 cups uncooked sushi rice
  • 2 cups water
  • 3 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • 1 teaspoon salt, divided
  • 8 ounces imitation crab meat, chopped
  • 4 ounces cream cheese, softened
  • 1/3 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 small cucumber, finely diced
  • 1 medium avocado, thinly sliced
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds
  • 2 nori sheets, cut into small strips or served alongside

Instructions

  1. Preheat the oven to 375°F and lightly grease an 8×8-inch baking dish.
  2. Rinse the sushi rice under cold water until the water runs mostly clear. Add the rice and water to a medium saucepan, bring to a boil, then reduce the heat, cover, and cook for 18 to 20 minutes until the water is absorbed.
  3. In a small bowl, stir together the rice vinegar, sugar, and 1/2 teaspoon of the salt. Fold the mixture into the hot cooked rice and let it cool for 10 minutes.
  4. In another bowl, mix the chopped imitation crab meat, softened cream cheese, mayonnaise, sriracha, soy sauce, and remaining 1/2 teaspoon salt until creamy and well combined.
  5. Spoon the seasoned rice into the prepared baking dish and press it into an even layer.
  6. Spread the crab mixture evenly over the rice layer. Top with the diced cucumber, then arrange the avocado slices over the top. Sprinkle with the sliced green onions and sesame seeds.
  7. Bake for 20 to 25 minutes, until the topping is warmed through and the edges look lightly set.
  8. Let the dish rest for 10 minutes, then cut into 9 squares. Add nori strips on top or serve them on the side, then serve warm or chilled.
