- 450 grams thinly sliced pork loin or pork shoulder
- 2 cups uncooked short grain white rice
- 1 medium yellow onion, thinly sliced
- 3 tablespoons soy sauce
- 3 tablespoons mirin
- 1 tablespoon sugar
- 2 cloves garlic, minced
- 2 tablespoons sliced green onions
Instructions
- Cook the short grain white rice according to package instructions until fluffy and tender.
- In a small bowl combine soy sauce, mirin, sugar, and minced garlic and mix until the sugar dissolves.
- Heat a large skillet over medium heat.
- Add the sliced onions and cook for about 3 to 4 minutes until they begin to soften.
- Add the thinly sliced pork to the skillet and gently separate the slices as they cook.
- Pour the prepared sauce mixture into the skillet and stir so the pork and onions are coated evenly.
- Let the mixture simmer gently for 6 to 8 minutes until the pork is fully cooked and the sauce slightly thickens.
- Divide the warm rice into serving bowls.
- Spoon the pork and onion mixture over the rice and drizzle extra sauce on top.
- Finish with sliced green onions and serve immediately.

- Slice the pork very thin for the most tender texture.
- Let the sauce simmer gently rather than boiling to keep the pork juicy.
