Description

A comforting Japanese rice bowl featuring tender slices of pork simmered in a savory soy and mirin sauce with sweet onions, served over fluffy white rice and finished with fresh green onions.


Ingredients

  • 450 grams thinly sliced pork loin or pork shoulder
  • 2 cups uncooked short grain white rice
  • 1 medium yellow onion, thinly sliced
  • 3 tablespoons soy sauce
  • 3 tablespoons mirin
  • 1 tablespoon sugar
  • 2 cloves garlic, minced
  • 2 tablespoons sliced green onions

Instructions

  1. Cook the short grain white rice according to package instructions until fluffy and tender.
  2. In a small bowl combine soy sauce, mirin, sugar, and minced garlic and mix until the sugar dissolves.
  3. Heat a large skillet over medium heat.
  4. Add the sliced onions and cook for about 3 to 4 minutes until they begin to soften.
  5. Add the thinly sliced pork to the skillet and gently separate the slices as they cook.
  6. Pour the prepared sauce mixture into the skillet and stir so the pork and onions are coated evenly.
  7. Let the mixture simmer gently for 6 to 8 minutes until the pork is fully cooked and the sauce slightly thickens.
  8. Divide the warm rice into serving bowls.
  9. Spoon the pork and onion mixture over the rice and drizzle extra sauce on top.
  10. Finish with sliced green onions and serve immediately.

  • Slice the pork very thin for the most tender texture.
  • Let the sauce simmer gently rather than boiling to keep the pork juicy.
  • Serve immediately so the rice stays fluffy and absorbs the sauce perfectly.
