- 500 grams ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated parmesan cheese
- 2 large eggs
- 2 tablespoons chopped fresh parsley
- 3 garlic cloves
- 2 tablespoons olive oil
- 400 grams canned diced tomatoes
- 2 tablespoons tomato paste
- 2 medium carrots
- 2 celery stalks
- 1 medium onion
- 1 cup small pasta
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups beef broth
Instructions
- Heat a large pot over medium heat.
- In a mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, parsley, garlic, salt, and pepper until just mixed.
- Add olive oil to the pot and sauté chopped onion, carrots, and celery until softened.
- Form small meatballs and gently add them to the pot. Pour in diced tomatoes, tomato paste, and beef broth.
- Simmer the soup for 25 minutes over medium-low heat.
- Add small pasta and cook until tender.
- Taste and adjust seasoning if needed, then garnish with fresh parsley and serve warm.

- Keep meatballs small for even cooking.
- Do not overmix the meat mixture to keep it tender.
- Cook pasta separately if planning to store leftovers.
