Description

Ingredients

  • 500 grams ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated parmesan cheese
  • 2 large eggs
  • 2 tablespoons chopped fresh parsley
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 400 grams canned diced tomatoes
  • 2 tablespoons tomato paste
  • 2 medium carrots
  • 2 celery stalks
  • 1 medium onion
  • 1 cup small pasta
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups beef broth

Instructions

  1. Heat a large pot over medium heat.
  2. In a mixing bowl, combine ground beef, breadcrumbs, parmesan cheese, eggs, parsley, garlic, salt, and pepper until just mixed.
  3. Add olive oil to the pot and sauté chopped onion, carrots, and celery until softened.
  4. Form small meatballs and gently add them to the pot. Pour in diced tomatoes, tomato paste, and beef broth.
  5. Simmer the soup for 25 minutes over medium-low heat.
  6. Add small pasta and cook until tender.
  7. Taste and adjust seasoning if needed, then garnish with fresh parsley and serve warm.
