Description
A quick and flavorful Instant Pot dinner made with tender frozen shrimp, colorful mixed vegetables, and a rich garlic butter sauce served over warm rice.

- 1 pound frozen raw shrimp, peeled and deveined
- 4 cups frozen mixed vegetables (broccoli, carrots, snap peas, bell peppers)
- 4 cloves garlic, minced
- 3 tablespoons butter
- 1 cup chicken broth
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon lemon juice
- 2 tablespoons fresh parsley, chopped
- 4 cups cooked rice
Instructions
- Set the Instant Pot to sauté mode and heat the olive oil.
- Add garlic, paprika, Italian seasoning, salt, and black pepper. Stir for 30 seconds until fragrant.
- Pour in the chicken broth and scrape the bottom of the pot.
- Add the frozen mixed vegetables, then place the frozen shrimp on top.
- Seal the lid and cook on high pressure for 1 minute.
- Immediately perform a quick release.
- Stir in the butter, lemon juice, and parsley until fully combined.
- Serve hot over cooked rice.
Notes
- Use raw frozen shrimp for the best texture.
- Quick release the pressure immediately to avoid overcooking.
- Add red pepper flakes for extra heat.
- Fresh lemon juice brightens the flavor beautifully.
