Description

A quick and flavorful Instant Pot dinner made with tender frozen shrimp, colorful mixed vegetables, and a rich garlic butter sauce served over warm rice.


Ingredients

  • 1 pound frozen raw shrimp, peeled and deveined
  • 4 cups frozen mixed vegetables (broccoli, carrots, snap peas, bell peppers)
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 1 cup chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 4 cups cooked rice

Instructions

  1. Set the Instant Pot to sauté mode and heat the olive oil.
  2. Add garlic, paprika, Italian seasoning, salt, and black pepper. Stir for 30 seconds until fragrant.
  3. Pour in the chicken broth and scrape the bottom of the pot.
  4. Add the frozen mixed vegetables, then place the frozen shrimp on top.
  5. Seal the lid and cook on high pressure for 1 minute.
  6. Immediately perform a quick release.
  7. Stir in the butter, lemon juice, and parsley until fully combined.
  8. Serve hot over cooked rice.

Notes

  • Use raw frozen shrimp for the best texture.
  • Quick release the pressure immediately to avoid overcooking.
  • Add red pepper flakes for extra heat.
  • Fresh lemon juice brightens the flavor beautifully.
