Description

This hot honey fajita tray bake is a bold, colorful weeknight dinner made with roasted chicken, sweet bell peppers, onions, fajita seasoning, and a glossy drizzle of hot honey. Everything cooks on one pan for an easy meal with smoky, sweet, and gently spicy flavor.


Ingredients

  • 1 1/2 pounds chicken breast, sliced into strips
  • 1 large red bell pepper, sliced
  • 1 large yellow bell pepper, sliced
  • 1 large green bell pepper, sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 2 tablespoons fajita seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoons hot honey

Instructions

  1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. In a large bowl, combine the sliced chicken, red bell pepper, yellow bell pepper, green bell pepper, and onion.
  3. Add the olive oil, fajita seasoning, salt, and black pepper, then toss well until everything is evenly coated.
  4. Spread the mixture across the prepared sheet pan in a single even layer.
  5. Roast for 20 minutes, stirring once halfway through cooking.
  6. Drizzle the hot honey over the chicken and vegetables, then return the tray to the oven for 5 more minutes.
  7. Remove from the oven, let rest briefly, and serve hot.

Notes

  • Use a large sheet pan so the ingredients roast instead of steam.
  • Do not add the hot honey at the beginning, or it may burn before the chicken finishes cooking.
  • Boneless chicken thighs can be used instead of chicken breast for a richer result.
  • Serve with warm tortillas, rice, or a fresh salad for an easy meal.
