- 1 large red bell pepper, sliced
- 1 large yellow bell pepper, sliced
- 1 large green bell pepper, sliced
- 1 large onion, sliced
- 2 tablespoons olive oil
- 2 tablespoons fajita seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons hot honey
Instructions
- Preheat the oven to 425°F and line a large sheet pan with parchment paper.
- In a large bowl, combine the sliced chicken, red bell pepper, yellow bell pepper, green bell pepper, and onion.
- Add the olive oil, fajita seasoning, salt, and black pepper, then toss well until everything is evenly coated.
- Spread the mixture across the prepared sheet pan in a single even layer.
- Roast for 20 minutes, stirring once halfway through cooking.
- Drizzle the hot honey over the chicken and vegetables, then return the tray to the oven for 5 more minutes.
- Remove from the oven, let rest briefly, and serve hot.
Notes
- Use a large sheet pan so the ingredients roast instead of steam.
- Do not add the hot honey at the beginning, or it may burn before the chicken finishes cooking.
- Boneless chicken thighs can be used instead of chicken breast for a richer result.
