Description

  • 1 pound boneless skinless chicken thighs
  • 8 ounces dry egg noodles
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 2 tablespoons olive oil
  • 8 cups chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper

Instructions

  1. Place a large stockpot over medium heat and allow it to warm.
  2. Add olive oil, then stir in diced onion, sliced carrots, and celery. Cook for about 5 minutes until softened. Add minced garlic and cook for 1 more minute.
  3. Add the chicken thighs to the pot and pour in the chicken broth. Stir gently to combine.
  4. Bring to a gentle boil, then reduce heat to a simmer. Cover partially and cook for 20 minutes until the chicken is fully cooked.
  5. Remove the chicken, shred it with two forks, and return it to the pot.
  6. Add the egg noodles and simmer for 8 to 10 minutes until tender.
  7. Stir in chopped parsley. Taste and adjust salt and black pepper as needed. Serve hot.

Notes

  • For best texture, cook noodles just until tender to prevent over softening.
  • If storing for later, consider cooking noodles separately to keep them from absorbing too much broth.
