- 1 pound boneless skinless chicken thighs
- 8 ounces dry egg noodles
- 2 medium carrots, sliced
- 2 celery stalks, sliced
- 1 medium yellow onion, diced
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- 8 cups chicken broth
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
Instructions
- Place a large stockpot over medium heat and allow it to warm.
- Add olive oil, then stir in diced onion, sliced carrots, and celery. Cook for about 5 minutes until softened. Add minced garlic and cook for 1 more minute.
- Add the chicken thighs to the pot and pour in the chicken broth. Stir gently to combine.
- Bring to a gentle boil, then reduce heat to a simmer. Cover partially and cook for 20 minutes until the chicken is fully cooked.
- Remove the chicken, shred it with two forks, and return it to the pot.
- Add the egg noodles and simmer for 8 to 10 minutes until tender.
- Stir in chopped parsley. Taste and adjust salt and black pepper as needed. Serve hot.
Notes
- For best texture, cook noodles just until tender to prevent over softening.
- If storing for later, consider cooking noodles separately to keep them from absorbing too much broth.
- Let the soup cool completely before refrigerating or freezing.
