- 2 pounds beef chuck, cut into chunks
- 2 tablespoons olive oil
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 3 large carrots, sliced
- 2 pounds Yukon Gold potatoes, peeled and cubed
- 4 cups beef broth
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 2 tablespoons all purpose flour
- 1 teaspoon fresh thyme
- 2 bay leaves
- 4 tablespoons butter
- 1/2 cup heavy cream
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Season the beef with salt and pepper, then coat lightly with flour.
- Heat olive oil in a large Dutch oven and brown the beef in batches. Remove and set aside.
- Add onion, garlic, and carrots to the pot and cook until softened.
- Stir in tomato paste, Worcestershire sauce, thyme, and bay leaves.
- Return beef to the pot and pour in beef broth.
- Cover and simmer on low heat for 2 hours until the beef is tender and the gravy thickens.
- Meanwhile, boil potatoes until fork tender.
- Mash potatoes with butter, heavy cream, and a pinch of salt until creamy.
- Remove bay leaves from the stew and stir in fresh parsley.
- Serve the beef stew over mashed potatoes.
Notes
- Brown the beef well for deeper flavor.
- Do not boil the stew aggressively or the beef may toughen.
- Leftovers taste even better the next day.
- Add extra broth when reheating if needed.
