- For the Cake:
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 cup Greek yogurt (plain or vanilla)
- 1 teaspoon vanilla extract
- For the Streusel:
- 1/3 cup brown sugar
- 1/3 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 3 tablespoons cold unsalted butter, cubed
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan.
- In a small bowl, mix together the streusel ingredients: brown sugar, flour, and cinnamon. Cut in the butter using a fork or your fingers until the mixture resembles coarse crumbs. Set aside.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
- Mix in the Greek yogurt and vanilla extract until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Spread half of the batter into the prepared pan. Sprinkle half of the streusel mixture over the batter.
- Spread the remaining batter on top, then sprinkle with the remaining streusel.
- Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool slightly before serving.
Notes
- Substitute vanilla Greek yogurt for added flavor.
- For a nutty twist, add chopped pecans or walnuts to the streusel.
- Store leftovers in an airtight container for up to 3 days.
