Description

Greek Yogurt Coffee Cake is a moist and tender cake layered with a cinnamon streusel topping. The addition of Greek yogurt keeps the cake incredibly soft and adds a slight tang that perfectly complements the sweet, buttery flavors, making it ideal for breakfast, brunch, or dessert.

  • For the Cake:
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 cup Greek yogurt (plain or vanilla)
  • 1 teaspoon vanilla extract
  • For the Streusel:
  • 1/3 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter, cubed

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour an 8×8-inch baking pan.
  2. In a small bowl, mix together the streusel ingredients: brown sugar, flour, and cinnamon. Cut in the butter using a fork or your fingers until the mixture resembles coarse crumbs. Set aside.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, beat the butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
  5. Mix in the Greek yogurt and vanilla extract until combined.
  6. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  7. Spread half of the batter into the prepared pan. Sprinkle half of the streusel mixture over the batter.
  8. Spread the remaining batter on top, then sprinkle with the remaining streusel.
  9. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow the cake to cool slightly before serving.

Notes

  • Substitute vanilla Greek yogurt for added flavor.
  • For a nutty twist, add chopped pecans or walnuts to the streusel.
  • Store leftovers in an airtight container for up to 3 days.
