Description

A vibrant and crunchy Mediterranean-style salad featuring grilled chicken, crisp veggies, feta cheese, and toasted pita chips tossed in a lemony herb dressing.


Ingredients

  • 4 cups romaine lettuce, chopped
  • 2 cups grilled chicken slices
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1 cup pita chips, broken into pieces
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
  3. Spread pita chips on a baking sheet and toast for 8–10 minutes until golden and crisp.
  4. In a large salad bowl, combine romaine, tomatoes, cucumber, red onion, olives, and grilled chicken.
  5. Toss the salad with the dressing until everything is coated evenly.
  6. Top with crumbled feta and toasted pita chips.
  7. Serve immediately and enjoy while the pita chips are still crunchy.
