- 4 cups romaine lettuce, chopped
- 2 cups grilled chicken slices
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, sliced
- 1/4 cup red onion, thinly sliced
- 1/3 cup kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1 cup pita chips, broken into pieces
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F.
- Whisk together olive oil, lemon juice, oregano, salt, and pepper to make the dressing.
- Spread pita chips on a baking sheet and toast for 8–10 minutes until golden and crisp.
- In a large salad bowl, combine romaine, tomatoes, cucumber, red onion, olives, and grilled chicken.
- Toss the salad with the dressing until everything is coated evenly.
- Top with crumbled feta and toasted pita chips.
- Serve immediately and enjoy while the pita chips are still crunchy.
