Description

Ingredients

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian seasoning
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper until well coated.
  3. Spread the potatoes cut side down on the prepared baking sheet in a single layer.
  4. Roast for 25–30 minutes, flipping halfway through, until the potatoes are golden and crispy on the edges.
  5. Garnish with chopped fresh parsley before serving.
