Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a large bowl, toss the halved potatoes with olive oil, minced garlic, Parmesan cheese, Italian seasoning, salt, and pepper until well coated.
- Spread the potatoes cut side down on the prepared baking sheet in a single layer.
- Roast for 25–30 minutes, flipping halfway through, until the potatoes are golden and crispy on the edges.
- Garnish with chopped fresh parsley before serving.
Notes
- For extra crispiness, soak the cut potatoes in cold water for 30 minutes, then pat dry before roasting.
- Use freshly grated Parmesan for the best flavor and texture.
