Description

A rich and cozy Eggnog Bread Pudding with soft brioche soaked in creamy spiced eggnog custard, baked until golden brown with crisp edges and a warm vanilla glaze.

Ingredients

Scale
  • 1 loaf brioche bread, about 14 ounces, cut into 1-inch cubes
  • 4 cups eggnog
  • 5 large eggs
  • 1/2 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1/2 cup powdered sugar
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 350°F and lightly grease a 9×13 baking dish with butter.
  2. In a large mixing bowl, whisk together eggnog, eggs, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  3. Place the cubed brioche bread evenly into the prepared baking dish.
  4. Pour the custard mixture evenly over the bread cubes and gently press down so the bread absorbs the liquid. Let sit for 15 minutes.
  5. Drizzle melted butter over the top and bake for 45 minutes until golden brown and set in the center.
  6. Whisk together powdered sugar and milk to create a smooth glaze.
  7. Drizzle the glaze over the warm bread pudding before serving.

Notes

  • Use slightly stale brioche for the best texture.
  • Let the bread soak fully before baking for a creamy interior.
  • Freshly grated nutmeg adds extra warmth and aroma.
  • Store leftovers covered in the refrigerator for up to 4 days.
