Description
A rich and cozy Eggnog Bread Pudding with soft brioche soaked in creamy spiced eggnog custard, baked until golden brown with crisp edges and a warm vanilla glaze.
Ingredients
Scale
- 1 loaf brioche bread, about 14 ounces, cut into 1-inch cubes
- 4 cups eggnog
- 5 large eggs
- 1/2 cup granulated sugar
- 2 teaspoons vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 2 tablespoons unsalted butter, melted
- 1/2 cup powdered sugar
- 2 tablespoons milk
Instructions
- Preheat the oven to 350°F and lightly grease a 9×13 baking dish with butter.
- In a large mixing bowl, whisk together eggnog, eggs, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Place the cubed brioche bread evenly into the prepared baking dish.
- Pour the custard mixture evenly over the bread cubes and gently press down so the bread absorbs the liquid. Let sit for 15 minutes.
- Drizzle melted butter over the top and bake for 45 minutes until golden brown and set in the center.
- Whisk together powdered sugar and milk to create a smooth glaze.
- Drizzle the glaze over the warm bread pudding before serving.
Notes
- Use slightly stale brioche for the best texture.
- Let the bread soak fully before baking for a creamy interior.
- Freshly grated nutmeg adds extra warmth and aroma.
- Store leftovers covered in the refrigerator for up to 4 days.
