Description

A hearty Dutch comfort food made with creamy mashed potatoes, kale, carrots, and smoky sausage. Warm, filling, and perfect for cozy dinners.


Ingredients

  • 2 pounds Yukon Gold potatoes, peeled and cubed
  • 3 cups chopped kale
  • 2 medium carrots, peeled and sliced
  • 14 ounces smoked sausage, sliced
  • 4 tablespoons butter
  • 1/2 cup warm milk
  • 1 teaspoon salt, plus more to taste
  • 1/2 teaspoon black pepper
  • 2 tablespoons whole grain mustard

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add potatoes and carrots. Cook for 15 minutes.
  3. Add chopped kale during the last 5 minutes of cooking.
  4. Warm the milk and butter together in a small saucepan.
  5. Drain the vegetables thoroughly and return them to the pot.
  6. Mash the vegetables until creamy but slightly chunky.
  7. Stir in the warm milk mixture, salt, black pepper, and whole grain mustard.
  8. Heat the smoked sausage according to package directions and slice it.
  9. Serve the mash hot with sliced smoked sausage on top.

Notes

  • Use warm milk for extra creamy mashed potatoes.
  • Do not overmix the potatoes to avoid a gluey texture.
  • Serve with extra mustard for added flavor.
  • Leftovers can be refrigerated for up to 3 days.
