- 2 pounds Yukon Gold potatoes, peeled and cubed
- 3 cups chopped kale
- 2 medium carrots, peeled and sliced
- 14 ounces smoked sausage, sliced
- 4 tablespoons butter
- 1/2 cup warm milk
- 1 teaspoon salt, plus more to taste
- 1/2 teaspoon black pepper
- 2 tablespoons whole grain mustard
Instructions
- Bring a large pot of salted water to a boil.
- Add potatoes and carrots. Cook for 15 minutes.
- Add chopped kale during the last 5 minutes of cooking.
- Warm the milk and butter together in a small saucepan.
- Drain the vegetables thoroughly and return them to the pot.
- Mash the vegetables until creamy but slightly chunky.
- Stir in the warm milk mixture, salt, black pepper, and whole grain mustard.
- Heat the smoked sausage according to package directions and slice it.
- Serve the mash hot with sliced smoked sausage on top.
Notes
- Use warm milk for extra creamy mashed potatoes.
- Do not overmix the potatoes to avoid a gluey texture.
- Serve with extra mustard for added flavor.
- Leftovers can be refrigerated for up to 3 days.
