Description

Juicy smashed beef patties with melty cheddar, crispy fried onions, fresh lettuce, tomato, pickles, and a creamy burger sauce, all wrapped in a golden toasted tortilla for a crunchy, satisfying meal.

  • 1 pound ground beef, preferably 80/20
  • 1 medium yellow onion, thinly sliced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 4 large flour tortillas, about 10 inches each
  • 4 slices cheddar cheese
  • 1 cup crispy fried onions
  • 1 cup shredded lettuce
  • 1 medium tomato, diced
  • 1/2 cup sliced pickles
  • 1/4 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon pickle relish
  • 1 tablespoon oil

Instructions

  1. Preheat a large skillet or griddle over medium-high heat until very hot.
  2. In a small bowl, mix the mayonnaise, ketchup, yellow mustard, and pickle relish to make the burger sauce.
  3. Divide the ground beef into 4 equal loose balls. Add a little oil to the skillet if needed.
  4. Place thin piles of sliced onion on the hot skillet, set a beef portion over each pile, and smash firmly with a spatula until very thin.
  5. Season the patties with salt, black pepper, and garlic powder. Cook for 2 to 3 minutes until browned and crisp, then flip.
  6. Top each patty with a slice of cheddar cheese and cook until melted.
  7. Spread burger sauce over each tortilla. Add shredded lettuce, diced tomato, sliced pickles, one cheesy smashed patty with onions, and crispy fried onions.
  8. Fold each tortilla into a wrap and place seam-side down in the skillet. Cook for 1 to 2 minutes per side until golden and crisp.
  9. Rest for 1 minute, slice if desired, and serve hot.

Notes

  • Use a very hot skillet for the best crust on the beef.
  • Slice the onions thinly so they soften and brown quickly.
  • Do not overfill the wraps or they will be harder to fold and toast.
  • For the best texture, serve immediately while the tortilla is crisp and the filling is hot.
