- 1 pound ground beef, preferably 80/20
- 1 medium yellow onion, thinly sliced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 4 large flour tortillas, about 10 inches each
- 4 slices cheddar cheese
- 1 cup crispy fried onions
- 1 cup shredded lettuce
- 1 medium tomato, diced
- 1/2 cup sliced pickles
- 1/4 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon yellow mustard
- 1 tablespoon pickle relish
- 1 tablespoon oil
Instructions
- Preheat a large skillet or griddle over medium-high heat until very hot.
- In a small bowl, mix the mayonnaise, ketchup, yellow mustard, and pickle relish to make the burger sauce.
- Divide the ground beef into 4 equal loose balls. Add a little oil to the skillet if needed.
- Place thin piles of sliced onion on the hot skillet, set a beef portion over each pile, and smash firmly with a spatula until very thin.
- Season the patties with salt, black pepper, and garlic powder. Cook for 2 to 3 minutes until browned and crisp, then flip.
- Top each patty with a slice of cheddar cheese and cook until melted.
- Spread burger sauce over each tortilla. Add shredded lettuce, diced tomato, sliced pickles, one cheesy smashed patty with onions, and crispy fried onions.
- Fold each tortilla into a wrap and place seam-side down in the skillet. Cook for 1 to 2 minutes per side until golden and crisp.
- Rest for 1 minute, slice if desired, and serve hot.
Notes
- Use a very hot skillet for the best crust on the beef.
- Slice the onions thinly so they soften and brown quickly.
- Do not overfill the wraps or they will be harder to fold and toast.
- For the best texture, serve immediately while the tortilla is crisp and the filling is hot.
