Description

A fresh and vibrant pasta salad packed with crisp vegetables, tangy feta, and a light lemon olive oil dressing that brings everything together beautifully.


Ingredients

  • 300 grams pasta, cooked and cooled
  • 200 grams cherry tomatoes, halved
  • 1 large cucumber, sliced
  • 100 grams black olives, pitted
  • 150 grams feta cheese, cubed
  • 1 small red onion, thinly sliced
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the pasta according to package instructions, then drain and cool completely.
  3. Place the cooled pasta into a large mixing bowl.
  4. Add cherry tomatoes, cucumber, olives, feta, and red onion to the bowl.
  5. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
  6. Pour the dressing over the salad and toss gently to combine.
  7. Chill the salad for at least 20 minutes to allow flavors to blend.
  8. Toss again before serving and enjoy.
