- 500 grams chicken pieces
- 1 cup all-purpose flour
- 1 cup breadcrumbs
- 1/2 cup grated parmesan cheese
- 2 large eggs
- 4 cloves garlic, minced
- 1 whole lemon
- 3 tablespoons butter
- 2 tablespoons olive oil
- 1 cup chicken broth
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat a skillet over medium heat and prepare three bowls for breading.
- Place flour in one bowl, beaten eggs in another, and mix breadcrumbs with parmesan in the third.
- Add olive oil to the skillet and let it heat until shimmering.
- Coat each chicken piece in flour, dip into eggs, then coat with breadcrumb mixture.
- Cook chicken in the skillet for 4 to 5 minutes per side until golden and crispy, then remove and set aside.
- In the same skillet, melt butter, sauté garlic, then add chicken broth and lemon juice and simmer briefly.
- Return chicken to the skillet, coat with sauce, sprinkle parsley, and serve warm.
Notes
- Let breaded chicken rest before cooking for better coating adhesion
- Cook in batches to avoid overcrowding the pan
- Use fresh lemon juice for best flavor
