- 3 pounds chicken drumsticks and thighs
- 2 cups buttermilk
- 3 cups all-purpose flour
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1/2 teaspoon cayenne pepper
- 1 teaspoon baking powder
- 2 large eggs
- Vegetable oil for frying
Instructions
- Heat vegetable oil in a large Dutch oven or deep skillet to 350°F.
- Whisk together buttermilk and eggs in a large bowl.
- In another bowl, combine flour, paprika, garlic powder, onion powder, salt, black pepper, cayenne pepper, and baking powder.
- Dip chicken pieces into the buttermilk mixture, then coat thoroughly in the seasoned flour mixture.
- Let coated chicken rest for 10 minutes.
- Fry chicken in batches for 12 to 15 minutes, turning occasionally until golden brown and fully cooked to 165°F internally.
- Transfer fried chicken to a wire rack and sprinkle lightly with extra salt.
- Serve hot with your favorite dipping sauces and side dishes.
