Description

This Creamy Lasagna Soup combines all the flavors of classic lasagna in a comforting, hearty soup. Ground beef and pork are simmered with aromatics, tomato sauce, and cream, then tossed with broken lasagna noodles and topped with melty cheese and fresh herbs.

  • 2 yellow onions, diced
  • 2 garlic cloves, minced
  • 1 tablespoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon chili flakes, adjust for heat

  • ½ teaspoon ground black pepper
  • 1 tablespoon smoked paprika
  • 2 tablespoons tomato paste
  • 10 oz ground beef (300g)
  • 10 oz ground pork (300g)
  • 3 cups tomato sauce
  • 2 cups heavy cream
  • 2 cups chicken broth
  • 1 teaspoon sugar
  • 1 cup water
  • 8 oz lasagna sheets, broken into pieces
  • 1 cup shredded mozzarella (measure with your heart)
  • Ricotta cheese and fresh basil for serving (optional)
  • Chopped parsley (optional)

Instructions

  1. Heat olive oil or pork lard in a large pot over medium heat. Add diced onions and sauté until softened, about 5 minutes.
  2. Add minced garlic, garlic powder, oregano, chili flakes, salt, black pepper, and smoked paprika. Cook for 1-2 minutes until fragrant.
  3. Stir in tomato paste, then add ground beef and ground pork. Cook until meat is browned and cooked through.
  4. Add tomato sauce, heavy cream, chicken broth, sugar, and water. Stir to combine and bring to a simmer.
  5. Add broken lasagna sheets and cook for 10-12 minutes, stirring occasionally, until noodles are tender.
  6. Stir in shredded mozzarella until melted and creamy.
  7. Serve hot, optionally topping with ricotta cheese, fresh basil, and chopped parsley.

Notes

  • Adjust chili flakes for desired heat level.
  • Broken lasagna noodles create the perfect texture for soup; use fresh or dried noodles.
  • Leftovers can be stored in the refrigerator for 2-3 days and reheated gently.
  • Feel free to use part-skim cheese or cream for a lighter version.
