Description

A vibrant and flavorful fried rice dish with tender crab meat, a hint of spice from fresh chili, and savory seasonings for a delicious and satisfying meal.


Ingredients

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1/2 lb crab meat, cooked and shredded
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 red chili, thinly sliced (adjust to taste)
  • 1/4 cup soy sauce (low sodium preferred)
  • 1 tablespoon oyster sauce
  • 1/2 teaspoon sesame oil
  • 1/2 cup frozen peas (optional)
  • 2 green onions, chopped
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the chopped onion and garlic, sautéing for 2-3 minutes until fragrant and softened.
  2. Add the sliced chili and cook for an additional 1 minute.
  3. Push the onion mixture to the side of the pan, add the beaten eggs, and scramble them until fully cooked. Once cooked, mix the eggs into the onion and chili mixture.
  4. Add the remaining tablespoon of vegetable oil to the pan and increase the heat to medium-high. Add the cooked rice and stir-fry for 3-4 minutes, breaking up any clumps.
  5. Stir in the crab meat, soy sauce, oyster sauce, sesame oil, and frozen peas (if using). Cook for another 2-3 minutes until everything is heated through.
  6. Season with salt and pepper to taste and remove from heat.
  7. Garnish with chopped green onions and cilantro, if desired. Serve hot and enjoy!

Notes

  • For extra spice, add more chili or a dash of chili flakes.
  • Use fresh crab meat for the best flavor, or substitute with imitation crab meat for a more affordable option.
  • This dish can also be made with other proteins such as shrimp or chicken.
