Description

Ingredients

  • 2 cups corned beef, sliced
  • 8 slices Swiss cheese
  • 1 cup sauerkraut, drained well
  • 1/2 cup Thousand Island dressing
  • 2 tablespoons butter

Instructions

  1. Preheat a skillet over medium heat.
  2. In a bowl, gently mix the corned beef, sauerkraut, and half of the Thousand Island dressing.
  3. Melt a small amount of butter in the skillet, coating the surface evenly.
  4. Place one tortilla in the skillet, layer with Swiss cheese, add the filling mixture, drizzle a bit more dressing, then top with more cheese and another tortilla.
  5. Cook for 3 to 4 minutes per side until golden brown and crispy, and the cheese is melted.
  6. Remove from heat and let it rest for 1 minute.
  7. Slice into wedges and serve warm.
