- 2 tablespoons butter
- 1 medium yellow onion, finely diced
- 2 stalks celery, chopped
- 4 cloves garlic, minced
- 1 cup shredded carrots
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 cups cooked chicken, shredded
- 1 pound potato gnocchi
- 1 cup heavy cream
- 1 cup milk
- 2 cups fresh spinach
- 1/2 teaspoon dried thyme
- Salt and pepper, to taste
Instructions
- Place a large soup pot over medium heat.
- Add olive oil and butter. Once melted, stir in onions, celery, carrots, and garlic. Sauté until tender and fragrant.
- Sprinkle in the flour, stirring constantly to make a light roux. Cook for about 2 minutes.
- Gradually whisk in chicken broth. Stir until smooth, then add shredded chicken, thyme, salt, and pepper.
- Bring to a gentle boil. Add gnocchi and simmer until they float, about 3–4 minutes. Lower heat and pour in milk and cream. Stir well.
- Add spinach and cook just until wilted. Taste and adjust seasoning if needed.
- Ladle into bowls and serve warm.
Notes
- Use rotisserie chicken for convenience and extra flavor.
- Add gnocchi only when ready to serve to prevent overcooking.
- Spinach should be added last to maintain color and freshness.
- Soup thickens as it sits, so add broth or milk when reheating.
