Description

A cozy Irish mashed potato dish made with tender cabbage, scallions, butter, and warm milk for a creamy, comforting side.

Ingredients

Scale
  • 2 pounds Russet potatoes, peeled and cut into chunks
  • 4 cups green cabbage, finely shredded
  • 4 scallions, thinly sliced
  • 6 tablespoons unsalted butter, divided
  • 3/4 cup whole milk, warmed
  • 1 1/2 teaspoons fine salt, plus more to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place a large pot of salted water over medium-high heat and bring it to a boil. Warm the milk gently and set it aside.
  2. Add the potato chunks to the boiling water and cook for 15 to 18 minutes, until fork-tender. Drain well and return them to the warm pot for 1 minute.
  3. Melt 3 tablespoons of butter in a large skillet over medium heat. Add the shredded cabbage and cook for 7 to 9 minutes, stirring often, until tender.
  4. Add the sliced scallions to the cabbage and cook for 1 minute.
  5. Mash the potatoes with the warmed milk, remaining 3 tablespoons of butter, salt, and black pepper.
  6. Fold the buttery cabbage and scallions into the mashed potatoes until evenly combined and fluffy.
  7. Taste and adjust seasoning if needed, then top with chopped parsley and serve warm.

Notes

  • Warm the milk before adding it to keep the potatoes creamy.
  • Do not overmix the potatoes, or they may turn sticky.
  • For a richer finish, add a small pat of butter on top before serving.
  • Leftovers can be shaped into potato cakes and pan-cooked until golden.
