Description

A creamy and comforting Midwestern casserole made with seasoned ground beef, mixed vegetables, cheddar cheese, and a crispy golden potato topping baked until bubbly and delicious.

  • 1 pound lean ground beef
  • 1 small onion, diced
  • 2 cups frozen mixed vegetables
  • 2 cans (10.5 ounces each) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 bag (32 ounces) frozen tater tots

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×13 casserole dish.
  2. In a large skillet over medium heat, cook the ground beef and diced onion until browned and softened. Drain excess grease.
  3. Stir in frozen mixed vegetables, cream of mushroom soup, sour cream, garlic powder, salt, black pepper, and 1 cup shredded cheddar cheese.
  4. Spread the beef mixture evenly into the prepared casserole dish.
  5. Arrange frozen tater tots evenly over the top in a single layer.
  6. Sprinkle the remaining 1 cup cheddar cheese over the top if desired.
  7. Bake uncovered for 40 to 45 minutes until the potatoes are golden and crispy and the filling is bubbling.
  8. Let the casserole rest for 5 minutes before serving.

Notes

  • For extra crispy potatoes, broil the casserole for 2 minutes at the end of baking.
  • You can substitute ground turkey or chicken for the beef.
