- 1 pound lean ground beef
- 1 small onion, diced
- 2 cups frozen mixed vegetables
- 2 cans (10.5 ounces each) cream of mushroom soup
- 1 cup sour cream
- 2 cups shredded cheddar cheese
- 1 teaspoon garlic powder
- 1 teaspoon black pepper
- 1 teaspoon salt
- 1 bag (32 ounces) frozen tater tots
Instructions
- Preheat oven to 375°F and lightly grease a 9×13 casserole dish.
- In a large skillet over medium heat, cook the ground beef and diced onion until browned and softened. Drain excess grease.
- Stir in frozen mixed vegetables, cream of mushroom soup, sour cream, garlic powder, salt, black pepper, and 1 cup shredded cheddar cheese.
- Spread the beef mixture evenly into the prepared casserole dish.
- Arrange frozen tater tots evenly over the top in a single layer.
- Sprinkle the remaining 1 cup cheddar cheese over the top if desired.
- Bake uncovered for 40 to 45 minutes until the potatoes are golden and crispy and the filling is bubbling.
- Let the casserole rest for 5 minutes before serving.
Notes
- For extra crispy potatoes, broil the casserole for 2 minutes at the end of baking.
- You can substitute ground turkey or chicken for the beef.
- Store leftovers in the refrigerator for up to 4 days.
- This casserole freezes well before or after baking.
