- 6 tablespoons unsalted butter, melted
- 24 ounces cream cheese, softened
- 1 cup granulated sugar
- 1 cup creamy peanut butter
- 1 cup sour cream
- 2 teaspoons vanilla extract
- 3 large eggs
- 8 ounces semi sweet chocolate, melted
- 1 cup heavy cream
- 1 cup chocolate chips
- 3 tablespoons peanut butter for swirls
Instructions
- Preheat oven to 325°F and lightly grease a 9 inch springform pan.
- Combine chocolate cookie crumbs and melted butter in a bowl until evenly mixed.
- Press the crumb mixture firmly into the bottom of the springform pan to form the crust.
- In a large bowl, beat cream cheese and granulated sugar until smooth and creamy.
- Add creamy peanut butter, sour cream, and vanilla extract, then mix until fully combined.
- Add eggs one at a time, mixing gently after each addition.
- Fold melted semi sweet chocolate into the cheesecake batter until smooth.
- Pour the filling over the prepared crust and smooth the top with a spatula.
- Bake for 60 to 70 minutes until the edges are set and the center slightly jiggles.
- Remove from the oven and let the cheesecake cool completely.
- Heat heavy cream until warm, then pour over chocolate chips and stir until smooth to create ganache.
- Spread ganache evenly over the cheesecake and swirl peanut butter on top.
- Refrigerate for at least 6 hours before slicing and serving.
Notes
- Use room temperature cream cheese for the smoothest texture.
- Avoid overmixing the batter after adding eggs to help prevent cracks.
- For cleaner slices, wipe the knife between each cut.
- Chilling overnight gives the cheesecake even better flavor and texture.
