Description

A rich and creamy chocolate peanut butter cheesecake layered over a crunchy chocolate cookie crust and topped with silky chocolate ganache and peanut butter swirls.


Ingredients

  • 2 cups chocolate cookie crumbs
  • 6 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 3 large eggs
  • 8 ounces semi sweet chocolate, melted
  • 1 cup heavy cream
  • 1 cup chocolate chips
  • 3 tablespoons peanut butter for swirls

Instructions

  1. Preheat oven to 325°F and lightly grease a 9 inch springform pan.
  2. Combine chocolate cookie crumbs and melted butter in a bowl until evenly mixed.
  3. Press the crumb mixture firmly into the bottom of the springform pan to form the crust.
  4. In a large bowl, beat cream cheese and granulated sugar until smooth and creamy.
  5. Add creamy peanut butter, sour cream, and vanilla extract, then mix until fully combined.
  6. Add eggs one at a time, mixing gently after each addition.
  7. Fold melted semi sweet chocolate into the cheesecake batter until smooth.
  8. Pour the filling over the prepared crust and smooth the top with a spatula.
  9. Bake for 60 to 70 minutes until the edges are set and the center slightly jiggles.
  10. Remove from the oven and let the cheesecake cool completely.
  11. Heat heavy cream until warm, then pour over chocolate chips and stir until smooth to create ganache.
  12. Spread ganache evenly over the cheesecake and swirl peanut butter on top.
  13. Refrigerate for at least 6 hours before slicing and serving.

Notes

  • Use room temperature cream cheese for the smoothest texture.
  • Avoid overmixing the batter after adding eggs to help prevent cracks.
  • For cleaner slices, wipe the knife between each cut.
  • Chilling overnight gives the cheesecake even better flavor and texture.
