- 1 pound gnocchi
- 2 cups cooked shredded chicken
- 1 cup diced carrots
- 1 cup chopped celery
- 4 cloves garlic, minced
- 1 medium yellow onion, diced
- 2 cups baby spinach
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 tablespoon olive oil
Instructions
- Set a large pot or Dutch oven over medium heat.
- Add olive oil and butter, then stir in onion, carrots, and celery. Sauté for 5–7 minutes until softened.
- Add garlic and thyme, cook for 1 more minute.
- Sprinkle in flour and stir well to coat the veggies. Cook for 1 minute.
- Slowly pour in the chicken broth while stirring. Bring to a simmer and cook for 10 minutes.
- Add shredded chicken and gnocchi. Simmer for 5–7 minutes until gnocchi float and are tender.
- Stir in heavy cream and spinach. Cook 2–3 minutes until spinach wilts.
- Season with salt and pepper to taste. Serve warm.
Notes
- Use rotisserie chicken for a quick shortcut.
- Don’t overcook the gnocchi to keep them tender.
- Grated parmesan on top adds extra richness.
- Soup thickens as it sits, add broth when reheating if needed.
