- 1 cup chopped kimchi
- 3 large eggs

- 1 teaspoon sesame seeds
- 2 garlic cloves, minced
Instructions
- Heat a large nonstick skillet over medium-high heat.
- Lightly beat the eggs in a small bowl and set aside.
- Add vegetable oil to the skillet and sauté the minced garlic for about 30 seconds until fragrant.
- Add the chopped kimchi and cook for 2 minutes.
- Stir in the cold cooked rice, soy sauce, and sesame oil until evenly combined.
- Push the rice mixture to one side of the skillet and pour in the eggs. Scramble gently until softly cooked.
- Mix the eggs into the rice thoroughly.
- Sprinkle the shredded mozzarella cheese over the hot rice and allow it to melt slightly.
- Top with sliced green onions and sesame seeds.
- Serve immediately while hot and cheesy.
