Description

Ingredients

  • 3 cups cold cooked white rice
  • 1 cup chopped kimchi
  • 3 large eggs
  • 1 cup shredded mozzarella cheese
  • 2 green onions, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon sesame seeds
  • 2 garlic cloves, minced

Instructions

  1. Heat a large nonstick skillet over medium-high heat.
  2. Lightly beat the eggs in a small bowl and set aside.
  3. Add vegetable oil to the skillet and sauté the minced garlic for about 30 seconds until fragrant.
  4. Add the chopped kimchi and cook for 2 minutes.
  5. Stir in the cold cooked rice, soy sauce, and sesame oil until evenly combined.
  6. Push the rice mixture to one side of the skillet and pour in the eggs. Scramble gently until softly cooked.
  7. Mix the eggs into the rice thoroughly.
  8. Sprinkle the shredded mozzarella cheese over the hot rice and allow it to melt slightly.
  9. Top with sliced green onions and sesame seeds.
  10. Serve immediately while hot and cheesy.
