- 1 lb raw shrimp, peeled, deveined, and finely chopped
- 1 1/2 cups Cheddar Bay biscuit mix (or regular biscuit mix with garlic powder and dried parsley)
- 1 cup shredded Pepper Jack cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup milk
- 1 large egg
- 2 tablespoons melted butter
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a large bowl, combine biscuit mix, Pepper Jack cheese, cheddar cheese, garlic powder, cayenne (if using), salt, and pepper.
- In a separate bowl, whisk together milk, egg, and melted butter.
- Pour wet ingredients into the dry mixture and mix until just combined.
- Fold in the chopped shrimp until evenly distributed.
- Using a tablespoon or cookie scoop, form mixture into 1.5-inch balls and place them on the baking sheet.
- Bake for 18–22 minutes, or until golden brown and cooked through.
- Let cool slightly and serve warm with your favorite dipping sauce.
Notes
- Serve with ranch, remoulade, or spicy aioli for dipping.
- You can prepare the mixture ahead and refrigerate until ready to bake.
- For a crispier exterior, lightly spray the shrimp balls with oil before baking.
