  • 1 large yellow onion, finely diced

  • 2 tablespoons olive oil

  • 2 tablespoons chopped fresh parsley
  • 3 tablespoons potato starch

Instructions

  1. Preheat oven to 375°F and lightly grease a 9×9-inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 6 to 8 minutes until soft and lightly golden.
  3. Add cauliflower rice to the skillet and cook for 5 minutes to remove excess moisture.
  4. Transfer mixture to a large bowl and stir in eggs, potato starch, garlic powder, salt, black pepper, and parsley.
  5. Spread mixture evenly into the prepared baking dish.
  6. Bake for 40 minutes until the top is golden and the center is set.
  7. Let rest for 10 minutes before slicing and serving.
