Description

This Buckeye Candy recipe is a healthier twist on the classic treat, made with creamy peanut butter, honey, and oat flour, then dipped in rich melted chocolate. Perfectly bite-sized, these no-bake candies are sweet, nutty, and indulgent without being overly complicated.


Ingredients

  • 1/4 cup honey
  • 1/4 cup oat flour
  • 3/4 cup chocolate chips (use Enjoy Life if dairy-free, or Lily’s for Keto)
  • 1 tsp refined coconut oil (optional, for smoother chocolate)

Instructions

  1. In a medium bowl, mix together peanut butter, honey, and oat flour until a thick dough forms.
  2. Roll the mixture into small balls (about 1 inch in size) and place them on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes.
  3. In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 20-second intervals, stirring until smooth.
  4. Dip each peanut butter ball into the melted chocolate, leaving the top slightly uncovered to resemble classic Buckeye candies.
  5. Place dipped candies back on the parchment-lined sheet and refrigerate until the chocolate is set, about 20 minutes.
