Description
This Buckeye Candy recipe is a healthier twist on the classic treat, made with creamy peanut butter, honey, and oat flour, then dipped in rich melted chocolate. Perfectly bite-sized, these no-bake candies are sweet, nutty, and indulgent without being overly complicated.
Ingredients
Scale
- 2 cups peanut butter
- 1/4 cup honey
- 1/4 cup oat flour
- 3/4 cup chocolate chips (use Enjoy Life if dairy-free, or Lily’s for Keto)
- 1 tsp refined coconut oil (optional, for smoother chocolate)
Instructions
- In a medium bowl, mix together peanut butter, honey, and oat flour until a thick dough forms.
- Roll the mixture into small balls (about 1 inch in size) and place them on a parchment-lined baking sheet. Chill in the refrigerator for 30 minutes.
- In a microwave-safe bowl, melt the chocolate chips with coconut oil (if using) in 20-second intervals, stirring until smooth.
- Dip each peanut butter ball into the melted chocolate, leaving the top slightly uncovered to resemble classic Buckeye candies.
- Place dipped candies back on the parchment-lined sheet and refrigerate until the chocolate is set, about 20 minutes.
- Store in an airtight container in the fridge until ready to serve.
Notes
- For Keto-friendly candy, use sugar-free chocolate and natural peanut butter.
- If the dough feels too soft, add a bit more oat flour to firm it up.
- You can freeze the candies for up to 2 months—just thaw in the fridge before serving.
- Adjust honey to taste depending on how sweet you like them.
