Description

Tender braised brisket slowly cooked with onions, carrots, garlic, and fresh herbs in a rich savory gravy. This comforting beef dinner is deeply flavorful, hearty, and perfect for family gatherings or cozy weekend meals.

  • 4 pounds beef brisket
  • 3 large yellow onions, thinly sliced
  • 4 medium carrots, peeled and cut into large chunks
  • 6 garlic cloves, smashed
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 2 tablespoons Worcestershire sauce
  • 4 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 2 bay leaves
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup pearl onions

Instructions

  1. Preheat the oven to 325°F.
  2. In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, salt, and black pepper.
  3. Heat olive oil in a large Dutch oven over medium high heat.
  4. Sear the brisket for about 5 minutes per side until deeply browned. Remove and set aside.
  5. Add sliced onions, carrots, garlic, and pearl onions to the pot. Cook for 5 minutes until slightly softened.
  6. Return the brisket to the Dutch oven and pour in the broth mixture.
  7. Add thyme, rosemary, and bay leaves.
  8. Cover tightly and transfer to the oven.
  9. Braise for 3 1/2 to 4 hours until the brisket becomes fork tender.
  10. Remove the brisket and let it rest for 15 minutes before slicing against the grain.
  11. Skim excess fat from the sauce if desired.
  12. Serve warm with the vegetables and rich onion gravy spooned over the top.

  • For even deeper flavor, prepare the brisket a day ahead and refrigerate overnight.
