- 4 pounds beef brisket
- 3 large yellow onions, thinly sliced
- 4 medium carrots, peeled and cut into large chunks
- 6 garlic cloves, smashed
- 4 cups beef broth
- 2 tablespoons tomato paste
- 2 tablespoons olive oil
- 2 tablespoons Worcestershire sauce
- 4 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 2 bay leaves
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 cup pearl onions
Instructions
- Preheat the oven to 325°F.
- In a bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, salt, and black pepper.
- Heat olive oil in a large Dutch oven over medium high heat.
- Sear the brisket for about 5 minutes per side until deeply browned. Remove and set aside.
- Add sliced onions, carrots, garlic, and pearl onions to the pot. Cook for 5 minutes until slightly softened.
- Return the brisket to the Dutch oven and pour in the broth mixture.
- Add thyme, rosemary, and bay leaves.
- Cover tightly and transfer to the oven.
- Braise for 3 1/2 to 4 hours until the brisket becomes fork tender.
- Remove the brisket and let it rest for 15 minutes before slicing against the grain.
- Skim excess fat from the sauce if desired.
- Serve warm with the vegetables and rich onion gravy spooned over the top.
